Baby Greens with Goat Cheese, Candied Pecans and Raspberry Vinaigrette
Ingredients 28 oz. Baby Field Greens
¼ lb. Goat Cheese
½ cup Pecans
Raspberry Vinaigrette
Directions Rinse and spin baby greens.
Crumble goat cheese. It is best to freeze the cheese prior to crumbling.
Candied Pecans Put sugar into small sauce pot on medium flame.
Stir constantly until golden brown color is present.
Add pecans to the pot of sugar until completely coated with the sugar.
Place mixture onto wax paper until the mixture hardens completely.
Then place in food processor or chop into crumbs.
Mix ingredients together in large bowl – drizzle with Raspberry Vinaigrette
(desired amount will differ) and serve.
Baby Greens with Diced Apples, Mandarin Oranges with
Balsamic Vinaigrette
Ingredients 28 oz. Baby Field Greens
2 Granny Smith Apples, peeled and diced
2 Fresh Mandarin Oranges (or if not in season, 2 small cans of mandarin
oranges will be just as delicious)
Balsamic Vinaigrette
Directions Rinse and spin baby greens.
Dice apples into small sugar size cubes - then set into lemon juice to preserve.
Peel and slice mandarin oranges to desired size.
Mix ingredients together in large bowl – drizzle with Balsamic Vinaigrette
(desired amount will differ) and serve.
